My family can relate. My brother was diagnosed within the past couple years with an autoimmune disease, and his whole diet had to change (and as result we adjusted the way we ate as well). He doesn’t eat anything refined or processed — nor does he eat dairy. However, the meals he eats are delicious, and slowly and gradually he’s been healing naturally. I know that has nothing to do with your main subject today, but when you started talking about what you cook and why, I just wanted to say that.
It’s crazy how many people I’ve met that have similar stories. We are eating very well, though we definitely miss certain foods. =P And Rosaria’s book is amazing, isn’t it? I also loved Openness Unhindered!!
Also, I love Rosaria’s book — one of the best and most authentic books I’ve ever read. Her second book, “Openness Unhindered,” is also amazing.
